Day 1 - Strawberry Vinaigrette Chicken with Quinoa and Salad

Breakdown of cost for this meal.

Strawberry Vinaigrette (Homemade) $0.95

Total cost for four servings = $10.47

Make the quinoa like rice - 2 cups of water for every 1 cup of quinoa. Pan fry chicken thighs in Strawberry Vinaigrette until browned, about 20 minutes. Salad is wild greens, tomatoes, dried fruit, cheddar, and strawberry jam juice.

  1. Oh yeah, today is day 1 of September. I entirely forgot. Well, I had some berries that we picked locally earlier in the season today out of the freezer. I honestly ate a lot more local the past four days than today... Well, I did eat about 10 tomatoes out of the garden today, and a blackberry, and some broccoli. Those all had zero food miles. :D
